Salam wa'leikum, it is said that the Turks adopted the symbol after conquering Constantinople in 1453, the star and the crescent representing Athena and the Virgin Mary. Subsequently as Turks began to dominate the Muslim world, this symbol was spread with it. I have a reference but unfortunately...
