I am doing a research on world religions for my class at UoP and I wnated to know what is the significance of an Islamic Center?

Think of it like a community centre. They will usually perform the Nikkah ceremony (marriage contract, which is not performed in a mosque), divorces, health services (like information on halal food), Quranic lessons, Arabic lessons, kids clubs and they usually have a library and fatwa department in the large centres.

1.Islamic centers are built and operated by local communities around the country to offer prayer, the second pillar of the Islamic faith. Islamic centers also offer varied activities, including civic and social services.
2.Muslims who attend mosques come from all ethnic backgrounds known in this country. Any Muslim can take part in prayer at any mosque. Many mosques, however, tend to be dominated by ethnic clusters.
3.There are Sunni and Shia mosques, but their religious and social services are much more similar than different.
4.There is no central structure that ties all Islamic centers, but many mosques are affiliated with national and local Muslim councils.
5.The contribution of Muslim women to Islamic centers is essential for the maintenance of mosque life. However, some Islamic centers are struggling with accommodating women activities. Also, in most mosques women are not represented adequately in decision making bodies.

It's basically like a community centre except an islamic created one. It is a multipurpose place, but it's one sole purpose is taking the muslims together on the straight path. It can sell books, organize charity funds, organize family occasions, but sometimes it depends on the centre. Some centres have classes, which maybe are weekly or daily, and host prayers during the time people are there.
