The word evil in Greek is "poneros" which means "hurtful" and is derived from the word "ponos" which means "anguish or pain or toil" which has its roots in the word "penes" / "peno" (to toil for daily subsistence)....starving/needful/poor/distressed.
Jesus is clearly not talking about a physical eye, so I think it is an object lesson about the body of believers. Check my logic, but Jesus teaches the body of believers has an eye for truth, however it closes by itself and so must be held open. I think he means truth without love is as useless as a closed eye. James (Jesus' brother) uses a similar anology of a mirror to say the same thing about hearing but not doing (1:25). He says to see the law and retain it within yourself you must be actively taking care of widows and orphans, etc. Similarly in Jesus model, actions hold the eye open for light to constantly pass in. Love is what causes us to see truly -- not discussions about concepts.
