If you seek vegetables I love CHINESE KITCHEN.
It is called in the Netherlands tjap tjoy.

Here is the translated recepy:

2 tbsp sesame oil
1 x onion
2 cm ginger
2 cloves of garlic
100 g snow peas
125 g bean sprouts
100 g carrot
100 g mushrooms
1 x pepper
1 tbsp ketjap
3 tbsp oyster sauce
75ml water
0.25 x vegetable stock cube (Maggi)
1 tsp cornstarch
sesame seeds

Vegetarian preparation
Preparing the vegetables
If necessary, clean the snow peas by cutting off the ends.
Finely chop the onion, ginger and garlic.
Cut the carrot and red pepper into thin strips.
Cut the mushrooms into strips.
Frying the vegetables
Heat the sesame oil in a large pan.
Add the chopped onion, ginger and garlic and fry.
Add the carrot and pepper strips and fry them together with the snow peas for 5 minutes.
Add the mushrooms and fry them with the other vegetables.
Prepare the sauce
Add the soy sauce and oyster sauce to the vegetables and stir well.
Dissolve 1/4 stock cube in hot water and add it to the vegetables.
Add the dissolved cornstarch to the vegetables to thicken the sauce.
Garnish and serve
Sprinkle the Tjap Tjoy with sesame seeds for a nice finish.
For extra spice you can add a finely chopped pepper.
